Add ingredients: 1 cup grated coconut, coconut milk, 1 tbsp chia seeds, 1 banana, 1/2 cup pineapple chunks (optional), 1 teaspoon honey or maple syrup, Ice cubes.
Take a small bowl and soak chia seeds in coconut milk for about 10-15 minutes. Allow chia seeds to expand.
In a blender, add grated coconut, coconut milk, soaked chia seeds, banana and pineapple chunks, and a pinch of sugar to sweeten.
Add few ice cubes to the blender to make a thicker, colder smoothie.
Blend the ingredients together to get a smooth and silky consistency.
Pour the smoothie into a glass, drizzle with extra coconut flakes or chia seeds. Enjoy!
