Sunny Priyan
Ingredients: 4 boneless chicken breasts, 1 can of coconut milk, zest of 2 limes, 2 tbsp olive oil, 2 cloves garlic, 1 tsp cumin, salt and pepper to taste.
Take a bowl, combine the coconut milk, lime zest, lime juice, garlic, cumin, salt, and pepper together. Marinate the chicken breasts for at least 30 minutes.
Heat the olive oil and cook the marinated chicken for 6-7 minutes, until it turns golden and crispy.
Pour the remaining marinade into the skillet. Simmer over low heat for 3-4 minutes to thicken the sauce.
Place the chicken on a serving plate. Now, pour the coconut milk and lime sauce on the top of the dish.
Garnish with fresh cilantro and serve hot with rice or your preferred side dish Enjoy!.
