Flour tortillas, feta, spinach, Kalamata olives, red onion, roasted peppers, oregano, olive oil,beans, corns, chilli powder, spices.
Start by prepping your ingredients—chop the olives, slice the onions, and crumble that feta.
Heat a non-stick skillet over medium heat and brush with a little olive oil.
Place a tortilla in the pan. Layer feta, spinach, olives, red onions, and roasted peppers on top.
Top with another tortilla and cook for 2-3 minutes. Flip and cook until golden brown on both sides.
Once crispy and golden, slice your quesadilla into wedges and serve with a side of tzatziki sauce.
