Sunny Priyan
Ingredients: 1 can of coconut milk, 2 cups chicken broth, 3-4 kaffir lime leaves, 1 stalk lemongrass, 3-4 slices galangal (or ginger as a substitute), 1 cup sliced mushrooms, 2 tbsp fish sauce, 1 tbsp lime juice, Fresh cilantro (for garnish).
In a bowl, mix coconut milk and chicken broth. Bring to a gentle simmer over medium heat.
Include Kaffir lime leaves, lemongrass, and ginger/ galangal to the pot. Simmer for another 5-10 minutes.
In the pot add thin sliced chicken pieces, and sliced mashrooms. Simmer for 3-5 minutes Until these are completely cooked.
Add the fish sauce and lime lime juice for refreshing taste. Adjust the seasoning if needed.
Once cooked, remove the lime leaves, lemongrass, and ginger/galangal slices from the soup. Garnish with fresh cilantro and serve.
