Chop the bell peppers, carrots, and onions into bite-sized pieces
In a pot, heat some oil & add onions, curry leaves, garlic paste, tomatoes & some spices. Sauté green curry paste until fragrant. This is where the flavor begins.
Next, add coconut milk and vegetable broth. Stir to create a rich, creamy soup base.
Add your chopped veggies. Let them cook in the soup until tender and full of flavor.
Add the boiled noodles to the soup and let it simmer, soaking up all the curry flavors.
Garnish with fresh cilantro, a squeeze of lime, and chili for a spicy kick. Your soup is ready.
