Sunny Priyan
2 eggs, 1 medium tomato, 1 green chili, 2 onion (finely chopped), 1–2 tbsp coriander leaves, salt & pepper to taste, 2 parathas or roti, 1 tbsp oil or ghee.
Whisk together eggs, chopped tomato, onion, green chili, coriander, salt, and pepper until well combined.
Heat a little oil or ghee in a non-stick pan over medium heat.
Pour and spread the egg mixture into the pan and spread it evenly into a round shape.
Place a paratha on top of the egg while it’s still wet. Gently press it and cook for 1-2 minutes, then flip and cook the other side until golden.
Remove from the pan and serve hot with chutney, ketchup, or yogurt.
