Lactic Acid, an organic compound with the chemical formula C 3 H 6 O 3 , is often associated with the tangy taste in dairy products like yogurt and cheese. This acid is the result of fermentation of lactose, or milk sugar. It's also found in beverages like kombucha and kefir. Lactic acid exists in two optical isomers, Levo and Dextro.
The first isolation of lactic acid from sour milk was done by Carl Wilhelm Scheele, a Swedish chemist, in 1780. This compound is white when solid and colorless when in liquid form, and it's soluble in water. A 1 mM solution of lactic acid has a pH of 3.51 .
